- Get your water temperature right. For chai, you want a rolling boil — not a gentle simmer. The high heat is essential to draw out the deep, complex flavors from the spices and tea leaves.
- Do not rush the spices. If you are brewing from whole spices, let them simmer in the water for at least 3–4 minutes before adding the tea. This gives the cardamom, ginger, and cinnamon time to release their essential oils.
- Add milk at the right moment. Pour your milk in after the tea has brewed, not before. This prevents the milk proteins from coating the tea leaves and blocking flavor extraction. Whole milk or oat milk works best for a creamy, rich body.
